So, if I shoot my opponent with an Ion cannon turret and hit, then later in the same combat phase, shoot at the same ionized ship again, do they get to roll defense dice? I can't find anything in the rules one way or another. I'm thinking you wouldn't get defense dice, as your ship can't maneuver, or get its action next turn, but I'm not sure. Thanks!
Ion cannon turret and combo?
Ion tokens only affect the maneuver executed in the next round. They have absolutely no impact on the defense dice. If it's not in the rules then it's not part of the game.
Also, a ship can take an action after it has been ionized. It simply performs a 1 white forward and then behaves as normal.
Do as the card says, not as it doesn't.
It says nothing about green dice, therefore does not effect them

The reason you don't find rules "one way or another" is because there are no rules. When a ship gets an ion token on it, or two for large ships, it doesn't reveal its dial the next time it would and instead does a white 1 straight. That is ALL it does.
It doesn't prevent the ship from taking actions which is what a Stress Token would generally do.
It certainly doesn't negate a ship rolling defense against an attack. There are things that alter dice rolling but there is NOTHING in the game that stops a ship from rolling Defense against an attack even if that roll is with no dice.

Gameplay > fluff. It is best that you completely forget what you think an Ion Cannon does based on the movies/games/novels etc. It has absolutely no bearing on how Ion Cannons work in the game.
As others have already said, do only what the rules say to do.
the only card that will drop a ship to 0 agility is wedge vs 1 agility ships that is the only time i see them stoping some one from rolling def dice

Tractor Beam and Outmaneuver work similarly to Wedge.
But, even with them, the defender still rolls the bonus dice from range 3+ and obstruction, as these are not buffs to the agility stat.

that is if Wedge.is at 3 if he is at 1-2 they get none
And the bonus defense die is only when getting attacked with a primary weapon at range 3.
No extra defense dice from cannons, turrets, missiles, or torpedoes at range 3.
^Just for the newbie.
And if you can find a way to get your opponent stressed and ionized at the same time, they won't be able to clear the stress with a green maneuver, so they won't be able to perform actions.
Say if you hit someone with a Flechette Cannon and an Ion Cannon. Or using that one Astromech that stresses the target, or Tactician crew.
