Justification: Rancors are supposed to regenerate, hence the surge to recover. This also means that I don't want to give it 2 defense dice as healing is much scarier when it's so hard to do damage in the first place. Stun just makes sense for something so big. Devour and stampede together make kiting it essential.
Edit: Remembered non-sentient.
Looks pretty broken with Imperial Officers. And Devour is way too strong. It could deal 12 damage and recover 6 health. Thats enough to wound almost any hero and completely negate an attack or two.
