Here's one for the B-Wing I found in my internet travels. The builder who made my S-Foil equipped B-Wing used his own method though I think. http://www.rule37.net/2014/12/x-wing-showcase-dagger-squadron-b-wing.html

Starvipers are apparently not terribly difficult from what others have told me. I know www.imagereplicas.com which has recently started making T65 and T70s with folding S-Foils says he had to have the hinge custom designed and 3D printed so not terribly simple unfortunately.

I modded my StarViper using little rare earth magnets and copious amounts of glue:

I ran into some issues, like added bulk and guns that don't face forward. But magnets, you guys. Others have used pins for a much cleaner final result:
