Porkins, Elusiveness, multiple dice in the same attack?

Hi all, appreciate some help with this one.

Jek Porkins, with Elusiveness, R5-D8 and Experimental Interface. I know that Jek should be able to use Elusiveness against multiple attacks (removing the stress from each Elusiveness).

The question is, where is it written that you can only use Elusiveness once against a single attack? I know that the FAQ says you can only perform card actions once per turn, but Elusiveness is not an action.

As Jek removes the stress (which would usually stop recurring Elusiveness actions) can he then do Elusiveness again? If not can someone please point me to the rule/FAQ reference?

As a second point, can someone confirm that Jek removing the stress is not an action? It isn't written as an action on the card, so I assume not and therefore EI doesn't trigger.

Once per opportunity rule - Rules Reference P8

A card ability cannot be resolved more than once during the timing specified on the card. For example, a card with the timing of “when defending” cannot be resolved twice by the defender during a single attack.

Actions are either printed on your action bar or have the Action: header.

It would be impossible to perform an action to remove a stress token anyway, as you can't perform actions while stressed (unless you are Tycho)
