The 'dark times' comics are good as are the 'rebellion' ones.
'Boba fett is dead' is pretty cool.
I personally didnt really like any of the 'legacy' series with the silly vong aliens, i just didnt feel they were very 'star wars'
I'm yet to find a star wars novel i like, i hate stackpoles writing after trying to read his god awful battletech books , i used to have 'tales from the mos eisley cantina', thats ok but suffers from the fact that it tries to give every minor person in there some epic back story. I used to quite like it but then as i got older i found it less interesting and less well written.
if you mean the (all but discarded) Expanded Universe then I can't help (beyond the Zahn novels) but here is a guide to all the new canon:

I have read the original three film books and also Splinter of the Mind's Eye , and thought would be good to catch up on a few books, and came across this!
I wouldn't read the old legends stuff. I'd read Tarkin, Dark Disciple, Lords of the Sith, Lost Stars. All canon.
Read the X-wing novels. Seriously; they're good, canon or not.
X-Wing Novels for sure, **** Disney's "non cannon" claim, they didnt make starwars what it is today, so **** them. Wedge Antillies FTW!
I highly recommend the new junior novels. They're fun and easy-to-read. I felt like the characterization in each one was done really well

Moving Target (Leia's Book; takes place between episodes V and VI)
