I've been looking through the books for an appropriate hyperspace incapable boarding shuttle, for ship to ship or ship to station interaction, but I can't seem to find one! Any ideas or ones that I have missed?
Boarding Shuttle
Pretty sure a plasma torch boarding device is in Dangerous Covenants. Mate that with an appropriate transport and you're good.
There's an easy to miss sidebar in the AoR core for TIE Bomber variants. One is the TIE/br boarding shuttle. Essentially a bomber with the torpedo pod replaced by a passenger compartment capable of fitting a squad of Stormtroopers. Probably what was implied to board the Tantive IV at the begining of ANH.
Also, in ESB, when Needa (IIRC) flies to Vader's ship there's a quick cutaway shot of a shuttle launch and it seems that they used the TIE Bomber model. These might be the same ship or there's a more comfortable TIE Shuttle variant as well.
Looks like they're two separate ships with slightly different stats but they're both found in the same sidebar. The main difference is the Shuttle variant (TIE/sh) has a 1/1 Defence shield generator on board at the cost of reducing the passengers from 9 to 4.
WEG's old d6-based The Far Orbit Project listed a Katarn -class boarding shuttle. Google it to get stats and images.

The Tie-Bomber has a variant mentioned in the corebook - the boarding tie holds a dozen troops and has a boarding tube (stats for the tube are in EotE: Dangerous Covenants).
Otherwise, it should be identical to the tie bomber...
The Tie-Shuttle is also mentioned. Again, just variant notes, not a full statblock.
