This is true. Poe has and proves his status in the movie. We know he is a cut above from the opening scrawl and have this confirmed by the villain. Then he goes and walks the walk.
Other than surviving both Death Stars, Wedges reputation and ability is all old EU really. He doesn't do anything to earn ace status beyond survive in the films.
In the battle of Endor he ends up behind a Tie Interceptor. In an X-wing. Pretty **** hard.

yeah, that DEFINITELY wasn't his fault! the **** star destroyed had Ordnance Crew, Poe dodged like 3 volleys until Finn distracted him, dealing him a stress token and he couldn't perform an evade action.
He is too short to be PS 10.
Poe needs to pick any card he wants from the deck when he deals damage. Not just to the hull either. For each point of damage Poe deals he picks a damage card from the deck and deals it to the target, face up.
He also never runs out of torpedoes.

Based on the scene at Moz's casino, it seems that his ability should read: "When Poe Dameron deals the last point of damage to a ship, he may immediately make an additional attack with his primary weapon."

This isn't because Wedge isn't a good pilot so much as it is the film techniques differed so much back then and they couldn't make it as impressive as they can now
Every time I fly against Poe, it is either Poe or the Stresshog that dies first. Poe always dies in one or two rounds of concentrated fire. It's a good ship, but he remains agility 2...

I still say Wedge and Luke should have swapped pilot abilities. Wedge survives, Luke hits tiny, hard to hit targets.

Now, to his credit... He DID fly a T-65 X-Wing through the Death Star II and THAT AIN'T EASY..!
But to his discredit Lando did it better. Honestly, I think Lando should be PS8.
Because he's sure as hell better than most pilots out there. **** that man can fly..! I mean, not only did he fly it through the Death Star II, but he aced bigtime in the fleet battle! He was a huge target, but outflew countless TIE Fighters.
Hell, honestly... I sustain that he's equal if not better than Han. Han's good, but is he REALLY better than Lando..?

To be fair, Poe's not checked out on the TIE/fo. The fact that he figured out the startup sequence in the amount of time he did, flew through the superstructure of a star destroyer on his first flight and then juked three missiles speaks volumes to his skill. His gunner's excitability notwithstanding.
I doubt the TIE/fo mass produced ship is significantly harder to fly that a regular TIE fighter. It's probably easier since it can handle the stress of maneuvers better.
X-wing pilots get a chance to fly TIEs in simulators, if I'm remembering X-wing the PC game correctly. X-wing the PC game is canon to reality.
As far as Wedge surviving, that's the mark of a veteran.
Poe Dameron did all those fancy maneuvers with the help of his droid.
R2-D2 was murdered by Darth Vader before Luke made his shot down the exhaust port.
Is Jar Jar Binks dead by now at least?
