Yes there is. If a ship attempts a maneuver and overlaps another ship it moves back along its template until it is no longer touching; this could move a ship all the way back to its initial position. That ship skips is Perform Action step during the activation phase. This same rule applies to the other ship as well.
It is all in the basic rules.

Two at the same time - another possible interpretation with two YT-1300s on the board at the same time in direct opposition to story & fluff (possible, but meh): Sure, go for it. Fluff and storyline don't apply to squad builds. Have Han fly one, and Chewie fly the other one.

To fortress properly, you want to have a maximum of one Large ship (otherwise there isn't enough arc overlap), with your ships having an advantage at R3, with many overlapping firing arcs, and the ability to leave the fortress swiftly and forcefully.
Best Fortress list I've seen so far: Howlrunner + 4x Alphas + 4x Autothrusters, though Moralo Eval in the YV-666 is practically built for it.
