Does Corran get his double tap if he's killed first in a simultaneous exchange? Look at both situations where he's the last to shoot and there's also someone shooting after him.

No, he gets his regular shot and then is removed from the board, as his double tap happens outside of normal pilot skill

If two Corran Horns with equal pilot skill are facing each other during the End Phase, the person that has init decides whether or not to Double Tap first. Afterward, whether or not the second Corran Horn is alive or dead, the second Corran Horn may then decide to Double Tap (due to silutaneous fire rule).

IF you died before your attack step (PS8 normal in combat phase, or beginning of End phase)
you don't get to attack.
In the case where PS8 with initiative kills your PS8 Corran Horn, you will get Corran's simultaneous fire shot but not his double tap because he is removed from the board at the end of PS8, even if your Corran is the last to fire in the initiative round, correct.

Saboteur would be on the action step of the activation phase. Since it would be before the combat phase simultaneous fire does not take effect. Now lets say saboteur was used on the another ship with the same pilot skill and also has saboteur. Does that ship get to make a move and have a chance to use saboteur? Answer would be know as it goes to whoever has the initiative.

Also, The end phase is not a combat round so even if both Corrans intended to double tap, if the first one kills the second, the second doesn't get to double tap the first. He died before it was his turn to activate in the end phase. Until he activates and declares intent to double tap, it's not in the queue.

This means a PS 8 Corran with initiative can shoot before a PS 10 VI Corran, and a VI Corran cannot get a PS kill on a non-VI Corran.

No. Corran's double tap occurs in the END Phase. If he is destroyed in the Combat Phase, even if there are no other ships left to shoot, he is removed from the table without getting to perform his double tap.

Not unintuitive if you come from MTG. Go to end step and both abilities trigger. From there you resolve the triggers in initiative order.
The only weird interaction I can think of involving Corran's double tap is if he kills Fel's Wrath during the end step. This lets the interceptor play as a zombie until the start of the next end step.
