Good starting squads

I'm aiming to teach people how to play X-wing and I need some good squads to start people playing with
I usually do

Wedge with R2-D2

and Fat Han

to start people with as both are fairly easy to play and understand but I am looking for other good lists that people can learn the basics of play with

I like a first game to be 1-2 X-Wings vs 2-4 Ties, all generics with no upgrades are fine and a few points plus or minus on one side doesn't matter. Just let them learn to fly and pull the trigger. You have to pass basic flight school before you can be a top gun school.

Then for a second game add in some famous aces Like Vader, Han and Luke with minimal upgrades. Its hard to keep track of a lot of synergies and how the turn order plays out the first few times. Ease into it so they don't get frustrated and decide they don't like it.

Also new players can have a hard enough time remembering all the little details, like what range you roll extra greens or reds or how stress works so I usually wait a few games before introducing obstacles and such as well.

I say just generics until people figure things out. Learn the basics and then learn the characters.

Personally, I find people of varying ages respond best to using the Quick-Start (1 X-Wing and 2 TIE Fighters) without anything else. After that, add in several asteroids and do it again. Then break out into beginner lists. Usually I put them at 100 points, but without any upgrade cards so that they get a feel for flying around a bit with more than a few ships and seeing what asteroids and the other player are going to do to them. Then they can start customizing them. I'll also do a Han and Luke list for youngsters that have seen the movies, they seem to like those a lot, and catch on to a lot of the game faster...

4x Y-wing with TLT, Dash plus 2 Y-wings with TLT, 3x Y-wings with TLT plus Jake etc. This game is not about X-wings and Tie-fighters. Yes, you can play a tie-swarm, but it takes more skill than most builds. Why not just start with the most efficient builds that are relatively easy to navigate? It´s fun to win, and many good players stick with turrets if it gives them the best win%. You still have to steer your ships around asteroids and avoid bumps even though they have turrets. Learning to manage turrets is my advice to new players, because there is no point in playing subpar builds and auto-lose just because you´re new.
