Well, that's up to you.
The other options adds more beef. Double perhaps the most with it's Linked 1, so unless you want the potential double damage straight away, keep that out of reach until they can make it themselves.
As for shoto or pike, they add a die, which is cool, but not game breaking.
I don't think it would be too broken for them to have one of the other sabers, even a saberstaff. It has some pretty weighty requirements to use without penalty. Not insurmountable, but it does push the player in a specific direction.
If they DO use a saberstaff, remember that thing is twice as obvious as a regular lightsaber when it comes to getting the Empire on your tail for being a rogue Jedi. Use that.

Have a look at the price, if it's similar to a basic Lightsaber then go for it, if it's double the cost then there is probably a reason and you will need to think about it.
A way around the extra power of 2/double Lightsabers may be to have them using Training Saber crystals. If they want Double Bladed or 2 Lightsabers then they get the pleasure of dishing out big damage in a thematic way, but they can't be modded to be massive damage. And you get to bring back all the enemy's the knock unconscious because they are only doing stun damage.

The lightsaber option given as part of Knight level is only for a basic saber, no other option is available at character gen. Yes they could try to get one of the more unusual types in game but they cannot start with one.
Personally, if a PC wanted a double-bladed 'saber or saber pike, I'd let them purchase the appropriate hilt from their character's starting credits, with the basic Ilum crystal being their Knight Level gear choice. Which largely works out to the 9000 extra credits that non-saber users get plus the hilt cost, meaning the PC would need to take extra credits.
For a shoto, since that hilt has the same price tag as a basic saber hilt, I'd just allow the player to choose a shoto instead of a basic 'saber.

the double bladed has a rule in the description where every attachment costs double to install, including the crystals. But the pike would be fine.
Personally I would also let them construct their own Saber Hilt and put in attachments at Character Creation, it makes it more of a personal item.
I would give them two sabers at cost of nothing else to start with but regular clothes and 10 credits to their name. Or I would give a double saber but roleplay the difficulty of keeping it hidden
I would give them a standard lightsabre and then let them build towards their dream sabre as part of the game.
Shoot or pike, no real problem. They are similar and both have pluses or minuses. It's hard to conceal a pike.
I wouldn't let them have a staff. I might be willing to let them have a staff hilt, but right now only one side works. They can treat it like a regular saber until they can find another crystal to mount in the other side.
