What will be announced this Christmas season?

Nothing. Maybe a mid wave release, like Imperial Aces. Maybe. But, I doubt they would announce something until at least the Gozanti is released.
A boat upgrade for the platinum club. So they get their products first.
At this point, I'm truly more interested in Aces packs to revitalize existing ships, than announcements of completely new designs. I've still barely explored the capabilities of my Wave 7s.

Information! I'm hoping the rest of the wave will get release dates. Have had the TAP on preorder and I really want another ship to use my Raider and Starviper upgrade cards on.
Also want to find out if the modification the TAP comes with is suitable for the TIE Punisher/Bomber.

If it's far enough along, we might get an announcement shortly after the Gozanti releases, which may be quite soon. However I'm betting there won't be a new announcement until after Wave 8 and the new film, which could be some time.
How popular is scum outside of the tournament scene (where everything is popular)? They were released later and still aren't part of any core set, plus there aren't really any iconic ships from the OT to really get casual players interested in that faction. (Maybe the slave 1, but that's sold as an imperial ship).
I'm sure FFG is committed to all three factions, but epic ships are expensive, and it's not obvious to me that an epic scum ship would be as successful.

Actually I would doubt we will get any more news on anything besides a couple of TFA ships after the premiere. With tons of stuff to spoil for wave 8 and the gozanti and the T-70/fo expansions that's a lot. A LOT. Any more and our heads will asplode.

So, pretty much the same argument against more EU ships. Scum will likely get an Epic ship, eventually.

I actually believe there are (at least) 3 categories of X-Wing buyer - casual, competitive and collector - I would be willing to bet an Epic scum ship would sell just fine.

I'd like to see 2 TFA releases announced with the epic S&V as the between Waves release:
The First Order shuttle + TIE combo...
And a Resistance box with new YT-1300 (with new and exciting pilots & upgrades) + Black T-70 would be OK with me. US$39.99 max.
Don't get me wrong, I would LOVE to see the Star Jewel get announced. I just don't see it as particularly likely anytime soon.

If the Epic ship comes with a serious fix for Scyks... I've already got three of them because I thought they looked cool.
The title really should have been free, or increased hull by one, or decreased the cost of an equipped upgrade by 2.
Or they should have come with a new symbol that means (1 of any secondary weapon) and put those on the Scyks.
