Like it says. I'm the GM, and I've got 2 sets of Star Wars dice. I'll eventually buy a third, depending on how things go money-wise, but two is what I could swing now (with 2 Corebooks of course). In two weeks I'll be playing my first game. So, is two sets enough, or ought I be trying to convince my players to get the Dice App or use an online EotE roller?

Starting out, that should be enough dice if you don't mind passing them around a bit. As the game progresses and the characters and challenges get tougher, you may find that you need more than two red or white dice. It's probably some time before that will happen though.
More dice just speed up the checks, as players can be assembling a dice pool when it's not their turn. But for the first few seasons everyone will want to look at the results themselves to get used to reading the dice, so 2 sets is fine.
The person who benefits most from the app is the GM, so long as you're players trust you, it calculates the results for you so makes initiative and "behind the screen" rolls quicker early on. But nothing beats the feeling of rolling dice!
It might be worth looking for the dice sticker sheet provided with the original eote beta. A pdf was provided on this site to allow you to turn normal polyhedrals into star wars dice. I have four sets of official dice but my bag of 'printed' dice comes in very handy at cons (I tend to have a lot of players. If you can't find the pdf (maybe in the archive) pm me and I will see if I can dig it out for you.
Two is probably enough to start with. The only limiter is the red die (with Despair), there is only one per pack. But new characters shouldn't be facing more than double reds too often.
Getting dice packs are a good excuse to buy the beginner boxes
So far, I've found two dice sets plenty. As Whafrog said, the red die can be a limiter especially if boss fights are doing some difficulty upgrading with despair but in general even that's not a problem. Most of the time a single set of dice is enough if players don't mind passing them around. I personally bought all of the starter sets and so have 3 sets now. In the vast majority of situations, more sets just mean less passing dice.
As a disclaimer to this, I've not played any prolonged games just single sessions ones so my experience of mid or later gameplay is very limited.
Thanks all, and it's good to know. I do plan to get at least one more set but one must confront one's wife in such matters, and thus, one cannot buy ALL the dice one may need all at once.
If you are interested I have found the PDF originally provided during the Beta process, you can simply print them off and stick them onto spare D12's and D6's. I printed them in colour on a sticker sheet, but you could do them black and white if you like since the dice type and symbols determine the difference between dice, and you could print them onto paper and glue them on.

Naw, I'd never hurt the preciouses. So I'll stick with my two sets for now, and wait for some money to make itself available for a third at some point. Plus, I'll go ahead and get the die roller. That ought to do it...
