I know that if you get hit by criticals and hits, that your evades dodges the basic hits first. But, let's say I have 2 shields, and I get hit with 2 hits and 1 critical. Which ones hit the shield first?

it's all in the rulebook.
First are always hits. They are evaded first (canceled by green dice)
They damage first.
So in your situation 2 hits blow off 2 shields then 1 crit goes through.

For normal damage, the Damage card is dealt facedown; for critical damage, the Damage card is dealt faceup and the text on the card immediately resolves.

There is one exception where open explosion symbol results are cancelled before filled explosion symbols; that is when using Autoblasters and the filled explosion symbols can not be cancelled. This only applies in the "compare results" step but when dealing damage, which is where Shields come in, filled in explosion symbols remove Shield tokens before open explosion symbols are counted.

Yep, brain fart. Because this section lacks which goes first. But the hits before crits part is up in the Attack section under step 7.

My friend and just started playing and sorry to harp on this hit/critical damage issue but my question is this:
Scenario
(Friend) X-Wing rolls a hit, critical hit and critical hit.
(Me) TIE fighter rolls all blanks.
Now. TIEs don't have any shields. So I take one hit, draw a damage card. Then I draw a second damage card face-up. It reads: Damaged Cockpit - After the round in which you receive this card, treat your pilot skill value as "0". Finally I draw a third damage card face-up. It reads: Blinded Pilot - The next time you attack, do not roll any attack dice. Flip this card facedown.
So does all this count as three hull damage? Or does it only count as two since that second card did not say flip card facedown?

It counts as three hull damage. All critical damage also counts against your hull.
Any time you draw a card, no matter if it's face up or face down, it counts as damage. Any time you have as many damage cards as you do hull that ship is destroyed, and removed from the table when appropriate.
