I Recently bought the old core set to test out the system, and me and my friends really enjoyed it.

I was wondering what I should buy next to enable me to build up some 100pt Rebel and Imperial lists.

Not sure if here was the right place to post this, but I figured it made the most sense.

For Imperials, you can't go wrong with the basic TIE Interceptor and the Imperial Aces in my book. Soontir Fel and Carnor Jax are both amazing, and this setup will allow you to field two dangerous ships. Unfortunately, you won't have the Autothrusters modification that makes them spectacular, but they'll be good regardless. The TIE Fighter pack will bring you Howlrunner (essential for TIE Fighter swarms) and Swarm Tactics (pretty useful for TIE Fighter swarms). The VT-49 Decimator is a flying tank with a 360 firing arc that's pretty helpful.

Thanks for the help guys, I'm leaning towards making both aces expansions my next order (along with a much needed extra pack of dice). Interceptors and A-Wings are my favourite ships from the franchise, so they'll be nice for display as well as gameplay. It's unfortunate that this will leave me without Soontir Fel, but I'm not looking to have the most competitive lists at the moment.

Would you say this was a good way to go?

Yep it's a good start and those packs will give you a fair amount of upgrades as well.
