They wear helms and face plates so you don't know they are making evil faces at you under there. 
Yes, dooku was a normal looking sith, that was actually refreshing I thought. I just don't want Vader 2.0 and death star 3.0 I still think the movie is gonna be great, just hoping there is not too much rehashing of old ideas.
