I would also use them as generic damage cards. Put them front to front in a sleeve and simple damage cards. There are scenarios that use tokens to track damage. Also, for the awesome A.I. Campaign, Heroes of the Aturi Cluster, you could use them for tracking experience.

I'm seriously considering doing an art project with them. If I could get a few dozen players to send unwanted decks to me, I think I could make something pretty cool then donate it to a charity auction.
You can always make the old damage deck into a "new" damage deck. Just take small yellow sticky notes and write the new card text on them, stick over the old card text, and presto! New damage deck. The amount of new cards is an exact swap out for the old ones, and several of the old cards are still the same as the new ones. You have all the new cards now as reference, so just copy the text and write them in over the old stuff. Its super easy, and then you have yet another extra deck you can share with others, or keep as your stay at home deck for play-testing, etc.
Buy them a nice box to sit in. One day you'll be able to sell them for lots of money as a collectors item and you'll be able to show it to your kids as proof that you survived the falling skies in growth of the X-Wing miniatures game.
You could also:
Make tiny card houses.
Practice throwing cards with them.
Use them as some obstacle for home rules.
Mix them in with your new damage deck for really weird casual games.
If I come up with more, I'll post later.
Build a hanger for your ships.

Just hold on to a set just in case.
You never know FFG MAY change their mind and the original damage deck may still have a use
Tape/glue some of the best crits to your storage container? My storage? It's the Plano with DIRECT HIT on the front of it.
Arrange the cards as a poster and frame it, although all the OCD people's would want the layout as 3x11 to avoid gaps.
You can use proton torpedo cards as filler too.

Might use some of my excessive amount of focus/evade tokens to fill in the gaps left by the rounded corners and then chop up the top of one of my many core set boxes so I can slap the 'X-wing' title in the center

This works best if you're also Gambit.
As i already wrote in another thread, i play sometimes big muliplayer games. The last game was a 8 player scenario. In this case additional damage decks come in handy. We used the old decks for standard damage and the new deck just for crits. So keep them. They dont take much space and maybe you ll need them.
