Hmm after careful consideration, my choice in vehicle would have to be the Y wing aka workhorse of the rebellion aka Bomb Bomb pew pew pew zoom zoom
YT-2400 with the Outider mod for me. Correllian Engineering makes 'em tough, economincal, and nimble.
Maybe a HWK-1000 if I wanted something smaller and sleeker.
YT-2400/1300- Dynamic crossover rebuilt from salvage. Assembled on Ord Mantel. Stolen transponder codes. Lower hull mount heavy laser cannons, upper hull mounted quad laser cannons.
But the agressor has no life support apart from the prisoner compartments iirc, good if you're a droid, not so much for us mortals
That's just for the IG-2000, specifically. The "stock" Aggressor has been used by carbon-based lifeforms (e.g. the Mandalorians)

Realistically you'd want something that you could actually live in, a YT or something like that. Military craft tend to be designed with the assumption that they'll have a military support base. Good luck trying to find spare parts for an E Wing in a junk shop.
The TIE defender is another good example, great craft, its RPG stats are superb, a good pilot will school anything out there in one. But its got no life support and can carry two days of consumables, its crazy expensive and probably just as expensive to run. You can make short hyperdrive jumps but the travel time will be very uncomfortable as you'll be sitting in a space suit the entire time. That doesn't matter in a military context, you'll deploy from an ISD near the combat zone and make a short jump to wherever you're fighting, but owning one without the Empire's logistical support base? Awful.

**** son. That's a hard question. I may just have to get my beloved HWK-290. Just enough space to kick back and relax between routes, small enough to fit in hangar bays...

Might need a few guns and an upgrade or two, but it's classy, fast, and comes with a crew of Astromechs, and anywhere there's a sun the glare blinds the hell out of your opponents.
Restricted to the game? Probably the Falcon or the Ghost. ( Chopper must be involved, of course)

CERTAINLY you are!
Restricting myself to in-game ships, its a toss-up between the K-Wing and the YV-666. YV-666 has plenty of living space, room for a modified small fighter to fit inside somewhere, and can put up a pretty good fight. Plus, with its general large-brown-box-with-wings charming ugliness, few people will want to steal my ride.
Whereas the K-Wing is crazy fun, and is exactly what I'd do to a ship - just keep adding things, then when it looks like enough, add more things. When that seems like too much, add more. Then strap more engines on it and give it SLAM.
Maybe I could dock the K-Wing to the YV-666...

Mine would be a Hwk-290 with two turrets under the wings controlled by droid brains and two ion cannons under the nose.
