Isslavery by the Imperials canon? My only knowledge of it comes from the E.U.

Slavery in he GCW era is canon now because of Rebels.

Also, C-3P0 made a mention of getting sent to the spice mines of Kessel while the Tantive IV was getting boarded in Star Wars.

Technically in the eyes of the law, droids are property not free individuals and therefore cannot be slaves, but I agree that the empire is pretty xenophobic and its upper echelons are undeniably evil. A noble or just regime does not anihilate an entire world of pacifists just because they don't like the politics of its rulers.
