As the recent owner of the lego ATAT I remembered wanting the normal toy version as a kid, which got me thinking if the regular toy would have been better on the shelf next to the model falcon. What do you guys think? Lego>toy? Or toy>lego?

I think you have to ask what purpose you’re planning on putting them to.
In some circumstances, one is likely to be better than the other, but in different circumstances the reverse is likely to be true.
So, better than what? In what circumstance?
I like the actual 3.75" figured vehicles myself. The legos are cool, but I want something that looks more like a model of the vehicle then something I would expect to find in Minecraft. But, my daughter is all about the legos versions, so to each their own. The only thing that upsets me is you can find nearly anything seen on-screen and off in the legos version. Not so much in the 3.75" version. So, apparently more customers like the legos.

So if it were display or play with I guess is what I'm asking. Some may prefer the display things that look like models and play with Legos, while other may display Legos and play with the toys.

I don't own many (of the newer) Star Wars toys. But I do own the LEGO Y-Wing, and that sucker is rad.
Personally, I like the LEGO versions, but that's more for the purposes I have. I lack the space for the bigger vehicles, and the LEGO versions can be a bit smaller. If they break and I lose pieces, I now have parts for something.
They also work really well as props for EotE to keep track of who is standing where (we're a little loose with range bands).
Really, it's all personal preference, so do what's best for you!
