It would barely matter if the Pup was printed with PS 10 for the amount of times that it's going to be seen.

So what is exactly being transferred to the Natash Pup? The printed value of the VI or Adaptability or the EPT cards themselves? How would this affect Dengar(crew) on a deployed Pup in a Scum vs. Scum match? Can he take out VI or Adapt. on a Pup?

The FAQ entry says nothing about transferring the EPT. It only says that the Pup gets the modified value. Boba Fett (crew) could be used to remove VI from a Hound's Tooth but would be unable to lower the Pup's PS.
