Yes, hits before crits, and any that aren't cancelled come off the shields (if any) before the hull, and that includes the crits.
No damage cards are dealt while you still have shields, unless an Upgrade card specifically says so. Like Proton Bombs.

The principal problem isn't your presentation (although that's not helping, and I'd encourage you to find an inexpensive netbook with a full-size keyboard and a browser with a spell-check function), it's that there are so many fundamental problems with questions like "Why can't the HLC turret on my Y-wing make two attacks?" that you're a poe. That is, I see only two plausible explanations:
(1) You're deliberately asking absurd questions to provoke responses. (Your dakkadakka posts provide a lot of weight to this hypothesis, for me.)
(2) You're struggling more than anyone I've ever seen to grasp even the most basic rules, like what upgrades can be equipped on a ship. You would need some sustained one-on-one mentoring in order to understand the game--and while I'm not opposed to providing that in person, it's difficult to do in an asynchronous format.
In either case, there's not a lot we can do to help you here.

Because the rules say you get one attack per round. Some upgrades cause exceptions to that rule, but your presentation here doesn't indicate that you're using any of them.

I really think you ought to read the rulebook, because it seems that the person who taught you either left some important stuff out, or has some pretty basic misunderstandings of their own.

The answer to every single one of your "Why can't I..." or "why doesn't it..." or "how does this..." can be found on the most cursory read of the rulebook.

Hlc is not a turret by the way.
It's a secondary attack
Ywing cannot equip a hlc.
Nor can they use gunner
Each ship has specific upgrade slots
This is what makes a ship unique
You cannot equip two if the same upgrades unless you have two if the same icon
The Lambda shuttle for example has two Crew slots.
Therefore you can take two crew on it.
The Firespray had one crew slot so you can only take one Crew.
Also the ion turret can be real nasty if used correctly
Yes it only does 1 dmg but now that ship isn't going anywhere which means if you play it right he'll not get a shot or you can line him up for a kill shot
Ion someone while stress and they are in more trouble.
Again read the rule book.
And do what the cards say.

We've all told him this before, Krynn. But, because I love repeating myself, Frogy, go and READ THE RULEBOOK. And when you've done that, READ IT AGAIN!!
This game is NOTHING LIKE 40K, so stop thinking along those lines. And don't ASSUME anything. Just because in the movies, a ship may have had lots of crew or guns doesn't mean it does in the game. The game mechanics are SIMPLE. A ship gets one shot per turn. Easy to remember.
It's not a complex system in order to make it fast to play. Last week I managed two games (including making a different list each game) while two other dudes argued over a game of 40K, that still wasn't finished by the time I'd packed my stuff away.
It's a great, fast and simple game. Don't overthink it.
