I would assume the new Episode VII one will just replace it.
Why assume that FFG would replace the core set with THE most iconic ship from star wars with a set with out the X-wing on the box cover.

You are missing an important part of this process.
Disney doesn't take a share of the FFG Star Wars sales. FFG buys a license to make the game. Disney also is the one to give the approval on what FFG releases. From a game and sales standpoint this is FFG's baby. Yes, Disney is certainly going to want to see Episode 7 stuff but no more than FFG wants to create a dynamic product that is going to capitalize on the opportunity to sell more product and hook an even wider fan base for one of the best and highest rated tabletop games currently in existence.
And as far as the old stuff aka original trilogy products, Disney absolutely wants to keep that relevant. They paid over $4 Billion dollars for Star Wars/Lucas Film/ILM. They have an interest in every single bit of it retaining relevancy as long as they can make more money off of it in the future.

I see both core sets as still being valid. The new cards in the damage deck is interesting and I'm not sure it was a good move on FFG's part. I'm wondering if they are extra cards for non-tournament play. They are clearly going to have to address this for tournament play. FFG does not have a track record of forcing new purchases.
One possibility not mentioned here. What if the pilot and upgrade cards are included in the individual blister packs for the x wing and tie fighter. No need to continue the original starter anymore as the contents are still available.
On the off chance that this is the case I'm going to buy another old core set and store it mint. If it becomes clear they are not discontinuing the old core set I will open it up. I was planning on buying one anyway to have 4 x wings and 6 ties.
