Is there any rules on resisting move power; ie being picked up, used as a projectile and other such shenanigans?

Yes, there is. I don't have the core book, just the beta, but there is a large sidebar entitled Resisting Force power Checks. Mainly PCs and major NPCs can roll an appropriate skill in an opposed check.

Page 195 in the beta, if you have it. Otherwise look in the beginning of The Force chapter.
