How many force rating do you need to have to be considered a "Jedi Knight"? Also, how does one improve their force rating instead of just getting more talent trees? Or is that considered the only way.

There's no official classification of "Jedi Knight" based on FR. Back in the EotE beta they gave some guidelines, but promptly ditched them.
Currently, the phrase "Knight level play" refers to creating a character with an additional 150 XP provided after creation, and typically having attained a lightsaber (or otherwise equivalent gear).

To answer, there is no definitive line on what mechanically makes a Knight. That's all roleplaying and story stuff. Let me repeat: there is no mechanical rule that defines ranking a Knight from a Padawan or Master. The term "Knight Level Play" in rhus game simply means a party (any party)vthat has gained 150+ XP.
I F&D, careers grant Force Rating 1, not specializations. You have to purchase the talent that raises FR. This is different from taking the universal Force Exile/Emergent from the other books.
It has been left up to each group to establish what a Jedi Knight even is, power wise.
Jedi are certainly defined by their use of the Force but their duties and rankings do not seem to be based solely on strength in its use... Anakin's fall is partly centered on that notion... Intelligence, wisdom, skill and compassion are all factors, it seems.
"Jedi Knight" is merely a title bestowed upon someone by the Jedi Order, so fluff. There is no requisite FR attached to the title unless your GM decides so.
"Knight Level Play" is a format for starting with more advanced characters (+150XP). If that's sufficient to count as a "Jedi Knight" has been the subject of much debate, and it ultimate boils down to your certain point of view. (personally I think 150 is fine, and will give you film like results, but I also prefer to aim low on such matters and interpret things pretty liberally)
+1FR talents are currently the only way to increase FR. Specializations like Exile provide an "FR of 1" not "+1FR" at purchase, and F&D Careers (not Specs) provide an FR of 1, and a character can only ever have a single career.
Shakes fist violently at you all!!!! There has to be a mechanical system in place to tell me whether I am a Jedi Knight or not! If not my GM can screw me and the other players over!!!

It's not like the Jedi Counsel sits around reviewing a character sheet to determine if a padawan has a sufficient FR.

Technically, roughly 18 or 20. You can start with 1 by taking the Exile or Emergent tree, and those each have a +1 FR Talent, taking you to FR3. Not all the F&D careers have a +1 FR talent, but some have two, so...
But that's a lot of XP....(massive understatement)...

Remember FR doesn't have an absolute value. Force usage is measured in FR, Bought upgrades, and willingness to do things like flip pips. A tree filling pip flipper will get a lot farther on FR2 then a base power loaded conflict chicken.

That seems more appropriate, given what someone with FR 3 is capable of once they have the appropriate Force power improvements. Although I'd add it's probably not strictly linear and there would/should be some overlap given the way that Force specialisations and FR work, more like: 1 - Padawan; 1-3 Knight (young / well-trained / veteran if you like); 3-5 Master (novice / experienced / veteran). I'd also echo the comments that the conferment of Knight / Master status isn't just a matter of FR, but also other demonstrated qualities like Morality, experience, training, etc. and in-character justification.

I mean, obviously Sage and Mystic get you the most FR in the fewest trees, but most of the F&D trees have an Force Rating talent at the bottom. How many specs do you want to buy into and navigate to reach Force Rating?
That said, once you have FR 3 or 4, you aren't going to get much out of further boosting it. Realistically, once you get to FR 2, you really need to be buying into powers and upgrades to make it work for you. (A lot of the force powers aren't really worthwhile if you have only FR 1.)
OTOH, some of the powers require a minimum of FR 2+, and some of the upgrades toward the bottom of the trees require committing three Force dice to sustain.

actually there is a limit. Currently it is i believe 18. But that is only because I believe that is the number of force rating talents in the game +1
