Ariad an undead lieutenant ? I would have said more a spidey-thing
You know, that is a great thought. One of my quests with runewars flavor ("bones and claws") has dark priests behaving as necromancers and raising "skeleton knights," which just have made up stats for the quest, like guards or militiamen. After Bilehall, I'd almost consider replacing them with reanimates. Rotten timing.
Also, I think crypt dragons count as undead- you can see their skeletons in their stomach area. They're either already dead or very unhealthy.

I have always thought of Ariad as a mummy sorceress. She does not become a huge land crab until she transforms into Queen Ariad.
See from the flavor and story, she's not an undead, since she trick the heroes many times being a normal woman and gives the heroes the Sun Stone, which does not fit with undying status
And I wouldn't have said a "huge land crab" but more a "giant mutated spider"
The mummy thing is maybe because of her web arrmor and clothes, more like a cocoon
