So I'm working on figuring out all the ship maneuvers and fairly got it but I'm confused on turning ships. It would seem that there is a cost to turn around a ship larger the a fighter. Like the Krayt Fang, Corvette, Capital ships. Where would I find this in the core books? Can anyone shed light on this for me?

Sure!
It's under the Fly/Drive maneuver. Turning a Sil 5 craft or larger, or moving a Sil 4 or smaller to a different defensive zone relative to a Sil 5 or larger object is moving within the Close Range band. You make the maneuver, make the zone change, and that's about it.
As you noticed, you only need to worry about tracking relative zone positions and facing for Sil 5 and up. So smaller craft like the the Krayt Fang get to pick where incoming fire hits until you start talking Gain the Advantage.
