There's old canon I've missed too, with no negative impact. I expect that anything missed is simply too mediocre to stand out.
Starkiller Base
Like it or not, a majority of things produced post Disney acquisition have been stronger than a lot of old Legends content.
Rebels is a great example.
That's an awfully subjective call, and I don't agree with it.

Also I am a father and watch the Rebels and am able to see it through my son's eyes as he is falling in love with Star Wars too. So I guess it also depends on the angle you want. If you want an Adult Star Wars you will be disappointed by a lot of what is out, but if you want family friendly Star Wars then you're going to like a lot of what is out. As a Father I am in the second category and use Star Wars to connect to my inner 12 year old. Then I play Legos with my son.
Of course when my son is not with me I will bust out the Game of Thrones.

It is. But at the same time, you're not really going to tell me you'd rather read Dark Empire than watch Rebels, are you?
If so, we should have a very serious talk.
Of course it is subjective, even the Holy Trilogy is subjective. We just all agree here that the OT was fantastic. That's an awfully subjective call, and I don't agree with it.

You sir, are a very cool dude.
Also they have said that they are keeping cgi effects to a minimal support role, mainly for the ships and space scenes. In the same spirit as the original trilogy they are using practical effects for robots creatures and explosions etc. That BB 88 droid is a real functioning remote control robot not a cgi effect.
Yeah, but you're still going to get a bunch of haters who say, "Jar Jar Abrams is gonna fill the movie with lens flares and CGI." That is the way of things. The way of the fans...

You know, I would rather read Dark Empire than watch Rebels.
Not for the writing and story, mind you, but because Dark Empire's art blows Rebels' so far out of the water that it achieves suborbital spaceflight.

Exsqueeze me sir.
Exsqueeze me.
You would rather see strange hues of blues and neon greens for pages upon pages, than a show that- you could pause at any point, and looks exactly like Ralph McQuarrie concept art?
You know, there's a reason the final film designs /don't/ look exactly like the concept art, that being they've undergone iterations that make the designs more coherent.
Rebels is lazy where it shouldn't be.
And don't try to tell me any frame looks like RMQ art, most of the character designs are not in that style (pretty much just Vader, and you'll note that's the episode I actually liked), which only serves to further highlight the contrast.
^Legends canon is simply an alternate universe, one with far more depth and thought than Disney canon.
I'm sorry, but no. Parts of the Legends canon has depth and thought; most of it helps demonstrate Sturgeon's Law. Have you ever read Children of the Jedi? The Lando Calrissian trilogy? Anything by Kevin J. Anderson? Any of the original Marvel comics? Anything at all with the Yuuzhan Vong in it? Anyone who pretends that Legends is smart and awesome and the new canon is awful has blinders on.
Your headcanon might well be better than Rebels. Mine is, too--but I recognize it for what it is, and it's a fairly small subset of the old EU.

You haven't looked at a lot of that concept art, have you..?
Also, sometimes concept art is better than the final product. Check out the ETA-2's concept art.

Just look at this sleek s**t man.
EDIT: *NOT* Asserting that this is McQuarrie art.

Go figure.
I love concept art designs, and think that all too often, absolutely fantastic ones get pushed to the wayside.
