It's Star Wars, so they will be as accurate as the plot requires. Which means most times, they'll have issues hitting the broad side of a sandcrawler.

Actually the stormtroopers had no problem hitting the sandcrawler. However, as a space fantasy, Star Wars cant have competent enough troops that kill off the main characters in the first meeting. Not to mention stormtroopers are not the "elite" branch of the armed forces, but THE armed forces, of which some stormtroopers may be an elite branch. What this means os you could encounter stormtroopers of varying skill.

He was probably basing it on his knowledge of the Clones. He was in seclusion for decades.

But because we're usually following critical imperial engagements, we mostly see stormtroopers. The few Imperial army troopers we do see are on guard duty in the Detention center [because the death star is huge and there's only so much you can guard with stormtroopers] and the Battle of Endor [Presumably there to create the illusion the base is lightly defended before the trap is sprung.
Yeah, storm troopers will never fair so well against main characters, but I'm ok with that because the main characters are obviously badass or they wouldn't have a movie made about them. There were probably plenty of other Luke wannabees in the Star Wars time period, but we don't have movies about them because they got shot.
However, I do feel writers and directors could do a better job at making the misses more plausible and also change it up a bit to make the reason they don't get killed because they avoided bad situations or came up with clever solutions instead of just yolo running through blaster fire and coming out without a scratch.

Based on what canon source? Star Wars rebels had Ezra traininng to be a Stormtrooper. We only ever see stormtroopers as front line infantry. Hell, even in the old legends sources the only time i see an inperial army trooper mentioned was in the star wars rpg's. No video game has ever had them, no comic that i know of, book, even fan film. They all use stormtroopers in the exact way that the army trooper would be used.
Nope stormtroopers were just the elite. The imperial Army is so big they couldnt afford to put every one in that armor.
