Custom Shops

So my question is, how do you guys build custom shops? With so much gear to choose from with all the books and supplements how do you guys generate a shop?

I don't. If the players want to buy something and have the money, I let them. For hard-to-find stuff, like rarity 6 and up, I make them roll Negotiation (or Streetwise for restriced items) to find it as per the rules. Other than that I don't get hung up on the minutiae of shopping.

We don't do it for everything, but if someone is looking for something a bit more exotic, I will totally create an NPC to handle things. Usually they will need to talk to a few people. If they've already talked to them before and are looking for more information, they can use the comlink or messaging to handle it and find the next best step. Sometimes it is vague (partly because I want to find out what they want and will need time to craft the encounter). In the next session or two, they will get a lead and some information. They will have to choose to pursue it over their current objectives. If they do, other things might happen along the way but in the end they can find the person or company that makes a rarer item and have a chance at getting one of their own. If they ever want a Viper it will cost them more than credits. They will have to collect some rarer items for the guy to make the item custom for them. Just like collecting lightsaber crystals.

For me, it is all about building a web of contacts for the players. Not to be burdensome, but to make the world feel alive and more realistic. It also gives them people to go back to if they need something (or to get repairs done on said Viper).

Streetwise roll to find a suitable venue for the item. I usually have the places they are in fleshed out with at least two or three such venues. Its also easy to to draw an NPC from the adversary chapter, sticking a name for his shop, and say the gear they are looking is sold there, along with fluf items and maybe other gear to tempt them to spend credits.

LOL, yeah, check the book again. it's specifically made so if the players want something that isn't a McGuffin you can handle locating it and haggling over the price in a single check (Negotiation for legal items, Streetwise for illegal, Success = you find it, Threat/Advantage = price adjustment, Triumph/Despair = it's modded, broken, illegal). If it's just typical adventure outfitting you can usually knock out a shopping trip in 3-5 rolls and then get back to the actual shooting of Stormtroopers thing.

I also would like to see enough items to fill spreadsheets. Mine is fairly meager at the moment, to be honest... though I try to go through and pull out details on names of different models even if it is exactly the same just for flavor. Cause let's face it, firing a BlasTech DL-44 Heavy Blaster Pistol is much better than firing a HBP, even if it does the same damage. Or maybe I'm just wired that way...
