In the games I’ve played, either the GM creates the name, or the pilot/owner comes up with the name.
We had a YT-2400 that was the Centennial Osprey, owned by Sven Huunto, I think it was. Not sure if I spelled that name right, though.
In our current game, we get shuttled around in various ships owned or arranged for by the New Jedi Order, and I don’t think I’ve heard any ship names get used.
One of my group members named the ship (a YT-1300) The Boudicca. He also named his two droids Caesar and Brutus.

This weekend I named a ship that I convinced the previous owners to sell to me for a steal the "Yellow Fluffy Bunny".
It's got a somewhat sentient Astromech brain upgraded to the max with several triumphs that has a bad attitude about being disrespected, making a mess onboard and whistles at modern, sleek looking ships in passing.

I followed this line of thinking (ie, rebranding the Millennium Falcon) and named a YT-1300 in one of my sessions the Century Drake .
But I'll probably end up going with one of my player's suggestions: the Decade Pigeon. We've heard it can make the Kessel run in less than twelve poop-secs.

Usually the GM handles the names of ships, unless the players decide to rename theirs. Currently, my players are flying Sentinel Seven . I don't recall the name of their previous ship.

My players were flying a ship I named for them - The Lazy Bantha. Now they are in a stolen corvette, debating on hiring a full crew, named Something for Nothing.
My favorites, though are Clad in Vermilion for a cap. ship, and a pirate vessel named The Yutta Hey.

My PCs are flying around in the Jade Whisper (YT-2000).
My EotE players are buzzing around in the Entropy (Ghtroc 720) and False Hope (HWK-290). We're starting up a paralel AoR campaign tomorrow, so I don't know what they'll be using there.
I let the players name their ships and I name NPC vessels. The list of those is simply too long to get into here.
We opted for a YT-1300 named the Black Nebula..... only because the Black Pearl was taken
