What happens if I use a probe droid(or two)'s self-destruct next to the officer and kill him?

Are the rebels just screwed? As far as I can tell there's nothing to stop it, self-destruct does damage to "each adjacent figure and object", and the rebels can't finish the mission without him.

Except neutral figures cannot take damage form any source.
