What does it mean: "you cannot attack again this round"???

Does the text mean that my round is over and no other units can perform combat moves, or does it simply mean that particular ship can`t do anything more?

I keep Reading how the gunner and luke Skywalker crew Upgrades are so powerful, but they also say "you cannot perform another attack this round".

How is this played out in turnaments?

If I use Han + Luke in millenium Falcon, can I still use a lower Level ship or is my turn over???

'You' referat to the ship, not the player.

It means that if you have multiple attacks like twin laser turret or cluster missiles and you use it on the first attack, you don't get to perform the second attack after using Gunner/Luke.

Your other ships are unaffected.

That is on page 19 of the rulebook:

Many card abilities use the word “you” to specifically reference that Ship card. Abilities on Ship cards cannot affect other ships unless explicitly specified by the ability.

Technically the 2nd sentence does not apply to gunner because he is not a ship card. The 1st sentence does.

Except you missed the next but one paragraph out....

Likewise, Damage cards and Upgrade cards only affect the ship to which they are assigned, unless otherwise specified.
So Gunner only applies to the ship to which it is assigned.

In the case of Luke Crew and Gunner it is there so that they don't keep triggering from themselves until you actually do damage.

Right. If that text wasn't on the card, Gunner and Luke would essentially say "keep attacking until you hit".
