What is the right way to handle XX-9 crits when you have Dodonna? Draw 4 and pick 1 then draw another 4 and pick 1? or draw 8 and pick 2? or draw 4 and pick 2?

Understand that damage is dealt one point at a time. Therefore indeed, this trigger will occur two separate times.

So its draw 4, place one on top, opponent draws, followed by draw 4, place one on top, opponent draws

Just to clarify, you only place one card back on top of the damage deck. The other three are discarded. This makes for a very big difference when using XX– 9's.
