When a knight is stunned, can he play "Guard"?

On the card "Guard" it says "perform an attack", so should this be seen as an action (even though not one of the regular 2 on a turn)?

Well, you are not performing an action when you activate the ability, so I would say yes.

You definitely can use the card. Remember that the Stunned condition and wording applies to when it is your turn .

Using Guard is done not on your turn (but the OLs) which means Stunned does not apply.

Stunned: Action: Discard this card or token. This is the only action you may perform on your turn while you have this card or token
