I see that u can pre measure with move templates but can't find anything about picking ships up and seeing how they will face before finally setting a course and seething it down.

I dont think you can move the ships as such during movement planning - just manipulate the tool. Estimation is at least part of the game,

Right. And once you lock the movement tool to the ship you are committed to that movement

You can't. You're not allowed to pick up or move anything on the table without cause.
