I have six TIE Interceptors (two normal and then two sets of Aces) and have only ever used three on the table at any time.
Four X-Wings and only ever used three max.
Two TIE Phantoms and only ever used one.
Three B-Wings and only ever used one.
Everything else has seen the table at least once. Using my shuttle later this week for the second time ever.
I have never flown in tournament most of my stuff.
I do however provide ships for other friends, for next tournament I'll support 8 other people, only one of the TIE-Advanced won't be used. 
Most of them, honestly. My local gaming scene is... infrequent. So I don't get to play hardly at all.
The only ship I own that I have never played are the Scum Interceptors. All my playtests end in disaster. They are too expensive and too frail for the cost.
I'm really surprised at all the people who don't use their minis. I mean, you don't even give it a trial game for fun? Do you only play hyper competitive tournament level games?
You know, the only ship I haven't played is the YT-1300 Falcon. I bought it as it's iconic...and has the Engine Upgrade card. I just don't have any interest in using it. Oh, I have loaned it to someone for a couple of matches, so I guess it got used. I even own C-3PO card, but never used it.
There are 2 Tie Advanced that I bought for the fix that comes with the Raider. I have used my first one quite a bit, but just got the others to wait for the fix. I've used all my other ships at least once, though. I think the 2nd most unused ship is the YT--2300. I think I used it once or twice, but I just don't like that style of ship. I did try it out, though.
So....for you people with epic ships or lots of ships you haven't tried, have you never thought about epic? I mean...why not give it a go at least once? I have to say that I love epic and have a great time with it. Have fun and goof off with it.
EDIT: The only ships I don't own are the Tie Phantom and the Rebel Transport. With the nerf to the Phantom now, I could probably see me using one, but not before. I just haven't dished out for the Transport, but I do have the X-wing pilots.

Never used my A-wings or my E-wing. This will most likely hold true for the K-wing I intend to buy to round out the collection.
For real guys! Give the A-Wing a run! Double EPTs, best dial in the game, tons of great pilot abilities. Don't be frightened by the 2-dice attack. That can be made up for easily and they are crazy fun.
Not really. The two dice is a big detriment, and there aren't any appropriately costed EPTs that make up for it. As is, the lower priced a-wings with chardaan refit seem about right, even with the two dice, but the higher level a-wings suffer. Tycho is awesome, but he's also 24 points with chardaan refit -- and realistically he's about 30 points by the time you put upgrades on.
I made my own, 1 point, that adds one to the attack value. Just before damage is assigned, the a-wing player has to choose and discard one of the attack dice. It's made the a-wing a much more viable choice for me, without making it as offensively powerful as an interceptor.

I've got all of the Imp and Scum ships (minus the GR and Tantive).
I've not used the Z's, Bombers or Advanced yet.
Won't be getting a Raider any time soon so not sure when the Advanced will get a run out. Z's might fill in a space at some point so probably will. The Bombers....I have no idea. Think I was being a completionist there.
Rebels: I have 2 Zs, and an E wing -- oh, and the GR-75
Scum: I have an M3-A and a Star Viper,
Empire: I have a bomber and a defender I haven't flown yet.
Do you have any idea how hard it is to resist getting 2 more Imperial Aces, so that I have 4 of each paint scheme?
No, no, not worth it. Expansions are expensive even when you consider everything in them. Buying things just for a card I simply don't get and doubt I ever will.

Yes, yes, yes, totally worth it!
Picking up a StarViper for Autothrusters allowed me to take my TIE Interceptors out for a spin!
And I grabbed an M3-A Interceptor to support a local store that was holding it's first tournament, and also for that sweet Mangler Cannon that has seen use on my YT-2400 and IG-2000!
To be honest though, I do plan on using them eventually. It's just that until 2 weeks ago I didn't even have enough S&V ships to field a decent 100 point list. 
Now I'm considering picking up a Most Wanted pack so I can run 4 scum Y-Wings at the next tourney...

I don't get to play all that much, and when I do I'm often practicing for a tourney, so some ships get left behind. The unopened ones are because I found a shelf full of X-wing stuff at Half-Price Books and bought it all. Not sure I'll ever need a 2nd E-Wing, the bomber is waiting on ordnance fixes, and the Advanced is waiting on the Raider.
I've never flown my Scyks, Aggressors, YT-1300, or my Rebel Transport. I haven't ever gotten all of my Interceptors on the table at once (I have 5 but only 1 Alpha) or all of my Xs, Ys or Zs. I've also only every used one of my two Starvipers. Other than that I've played with everything I own in the quantities that I own.

In my case it's just sticking to ships that I desperately want to work. I spent more time than any sane man should trying to make dual Defender lists work competitively. And no, two HLC Deltas and Jonus don't cut it against arc dodgers.
