Been looking over the Beta book and having a hard time figuring out what is the best spec for a Agility based Jedi.
Many of the talents say instead of brawn use X .. but im looking for a Spec that focuses on the Agility side.

If you mean Lightsaber Specs, then Seeker/Ataru Striker. All Lightsaber trees except Shii-Cho give options to swap out one of the other characteristics besides Brawn for Lightsaber checks.
For non-Lightsaber specs, both Sentinal Shadow (stealth), and Warrior Starfighter Ace (piloting) rely a lot on agility as well.
If you want to pew-pew, Hunter. If you want to use glow-stick, Ataru+Artisan does a nasty Saber Swarm + Imbue Item combo. For any other thing, Mastercard
Ataru Striker is really good if you want an Agility-based lightsaber wielder, but just bear in mind that you're going to be a glass cannon, as the spec is very depending on strain, but only has the Balance talent in Row 5 to help recover strain afterwards and only offers Cool as a career skill, which is linked to Presence which generally isn't an important characteristic for most Seekers. So something to keep in mind.
Also worth mentioning, only the "Special Move" talents really need the matching Form. So you can take Ataru to get the Agility Characteristic, and then take a different Saber Tree that has more of the talents you actually want...
That's a lot of XP of course, but then again, becoming a Jedi master isn't a short or easy path...

That's a good point, and I've got a character that will be doing just that once he picks up Hawk Bat Swoop (already have the Dantari Crystal).
That being said, in contrast to a lot of other crystals, the Dantari isn't all that amazing since it caps out at Damage 9 and has no ranks of Vicious or other weapon qualities, which may be a deal-breaker for some players. Also depends on the character's Force Rating, as FR 1, Hawk-Bat Swoop, and a Dantari Crystal isn't going to get you a whole lot. particularly if the PC also wants to take advantage of Sense's defensive options (which it seems a lot of PCs do).
Also should be mentioned that the GM may not even allow the PC to obtain a Dantari Crystal. Mine did because he's a major fan of the KOTOR games and really wanted to run a one-shot with my PC traipsing around Dantooine in the ruins of the old Jedi Temple from those games. Depending on when the game is set, there might be a lingering Imperial presence (Dantooine was home to the Rebel Base for a while after all), and it may not even be known to the PCs that the planet is a possible source of lightsaber crystals.
Of course, that was a best scenario situation. In most games, you just run with what you've got.
In our game, we still don't know which crystals are we going to have, so no planning ahead yet.
You can always look for talents like Second Wind or Makashi Fluorish.
