I played that this weekend down in Vegas. It's pretty sweet, but each level is kind of short. An easy way to lose a lot of money, but more fun than gambling, which had the same result!
In addition to the usual expected levels, they have an awesome one where you get to play as Darth Vader right after the Death Star goes up.
Everything I've heard and seen says that the game play interaction is very limited - just shooting and a little Maneuvering - but it's really about the immersion experience. A lot like StarTours at Disneyland.
I was a little bummed actually. They are beyond cool to sit in, but you have almost zero interaction in the game which is a bummer.

I got to play the Darth Vader level and Hoth level at Star Wars Celebration, and it was AWESOME! I'll grant that the control is a little limited, but I enjoyed the simplicity. Throttle control was nice, and I agree with GrumpyMuffin that the immersion is just fantastic. ...it probably helped that I didn't have to pay to play it
