Went to my first tournament and they were telling me to wait until the attacker finished modifying dice before you roll defense. My friends and I always rolled at the same time. Doh

I'd say you need to wait otherwise you are giving the other guy more information to use to make his attack modification decisions. He rolls his attack with three dice while holding a Focus and TL and you throw your defense at the same time turning up enough dice to completely cancel all of his attack why would he spend the TL or Focus when he knows you can already stop them?
As the Defender do you want the Attacker to know precisely what they need to roll to get any damage through to your ship?
If that's not how you're playing it when rolling both at the same time then I'd say the Defender is cheating. He will either be denying the Attacker the chance to modify his attack dice as you are skipping straight to defense or, less likely, you will then say the defense roll "doesn't count" and then reroll it again.
If I'm the Attacker I'd love for you to roll your only defense before I have to modify my attack dice. I have Han w/ Focus token and roll [kaboom] [eye] [blank] against your Interceptor which is rolling two [evade] results I think I'll just hang on to my Focus for later after I reroll everything.
Actually, the Defender, per the rules, has the has the first opprotunity to alter Attack dice. Likewise, the Attacker has the first opprotunity to alter defense dice, I haven't seen it used but the rule does exist and can drastically change an attack or defense roll.

I would have to ignore his roll, modify the dice however, and make him pick up his dice and try again. That's just not how the game is supposed to be played.
Or make an elaborate point of analyzing his rolls and explaining how that is helping you.
"Hmm, let's see here. You rolled 2 evades, so even if I used my focus I have no chance to do any damage, I think I'll save the token to defend against your counter attack."
Done the analyzing and pointing out why not to roll but he just keeps doing it. Lucky for me I have a few other shops nearby.
