Although it's highly unlikely to end up in the situation, if your line of fire to an enemy crosses through two obstacles tokens, does the enemy ship gain two evade dice (one from each obstacle?)

No. The rule for rolling dice comes from the fact that the shot is obstructed, not from each obstruction.

The question to ask: Is my shot obstructed or not?

Yes: Target gets a bonus die for defense.

No: Target does NOT get a bonus die from an obstructed shot.

Either the shot is obstructed or it is not and once it is obstructed adding more obstructions does not change that.
