The X-wing series.
Michael Stackpole's X-Wing series is great for some starship biffo. Unfortunately, it only really focuses on the Rebels.
In my humble opinion, they're worth the read. They're not going to make the Penguin's Classics lists but they're fun. I felt they took a downward turn when Aaron Alliston started authoring them .. but that's just my opinion. Many like his work.
If you want Imperial pilots .. your best bet might be to grab a copy of Tie Fighter for PC.
Imperial pilots? The Stele Chronicles (The insert that came with Tie Fighter- You can get a PDF copy when you purchase Tie Fighter on gog.com. which every X-wing fan should own) is the only one that's truly imperial. Soontir Fel of the Rogue Squadron comics is a late coming imperial defector, but the two story arcs before he joins the squadron might interest you.

I greatly enjoyed the X-Wing novels, but I have the reverse opinion. I thought Stackpole's stuff was serviceable, but I found his characters a little bit stuffy (especially Corran Horn). On the flip side, I very much enjoyed Alliston's stuff; his band of rogues were more fun as protagonists, and Warlord Zzinj and his minions were a fantastic villain force.
Still, to each their own. Reading the series was a pleasure that left me wanting more.
