In the Spice Job, I spawned a Nexu and used it to cover the spice barrels in the back room. It's not clear from the rules whether or not the presence of the Nexu on top of the barrels prevents the heroes from interacting with them. I wondered the same thing myself but figured since the rules do not actually state that an enemy model blocks then you'd still be able to interact as long as you were adjacent to the object.
Rules Reference Book... pg6 "Attacking Objects"
• If a figure is in the same space as the token, the figure and
token are targeted for attacks independently. Neither the figure
nor the token block line of sight to the other.
I think I may have misunderstood - if you aren't adjacent to -or- occupying the same space as a token you cannot use the interact action. That's under interact on pg 15 of the Rules Reference Book.
IMHO, I think in order for you to block it you'd have to prevent them from getting adjacent to it

I believe you are correct. The advantage for the Imperial player would be that in order for you to move up and collect, you'd have to fight through that big kitty. It would take your actions away from hitting your goal and putting them towards killing the Nexu which could be a time sink.
Even in the example where you could interact, if you move in and then interact, your hero's activation is done, and the Nexu could swipe at you. Depending on the game state, that could be a problem if it makes your hero withdraw.
So if I was in a situation like this where x is Nexu, X is the barrel under the Nexu, and H is the hero, they could interact:

That's pretty much spot on. You would need to physically prevent the hero from being adjacent in order to stop it from interacting.

Was trying to figure out something similar in "Fly Solo". The Rebel entrance token is at the end of a hallway that's only 2 squares wide and in the corner. If I place the Nexu in the last 4 squares of the hallway, it covers the token and keeps 1 more space, because the 2x2 base of the Nexu, between the token and a hero. A hero can't move through the the Nexu because there's nowhere to end their move past the Nexu. You can't end a turn on another figure correct? So the hero has to fight/kill the Nexu correct?

No, because you don't have to end your move to Exit. All you need is to spend a movement point while on, or adjacent to, the marker. Spending movement points is what you do while moving. If it was opening a door, etc, that would be different, because you have to end your move in order to perform a different action (i.e. Interact).
