I'm kind of embarrassed about this one as long as I have been in to this game but I have always wondered if the evade token just makes one of your pool dice a evade or adds one more evade to your pool?

For example if I have three agility and roll three evades can I use an evade token to have a total of four evades?

Spending an evade token adds a new evade result to your dice pool, so the quoted part is exactly how it works.
