When counting the 3 spaces from Nexu's Pounce ability, is it restricted to counting those 3 spaces as a Large figure would move? (ie, not diagonally)

No it is not. Counting Spaces and Moving are two different things. If it said "Move X spaces" then it would restrict movement as a large figure would move.
