Can Halberdiers hit a mounted knight with a Sword on Shield roll or can the mounted knight ignore it with the lance? Maybe the mounted knight ignores only ONE sword on shield instead of Two (which is typical vs a foot unit) against halberdier units?

Mounted knights always ignore the first SoS rolled against them.

Hello, I am in no position to debate this since I am a noob.

But from the rule book (pg. 23) it sounds as though only certain weapons are affected by this, and are stated on the card.

I think it would make sence since Halberdiers historically, were a weapon of specialty when it comes to taking out mounted units.

You got that one right. The ignore 2 comes from (1) being a cavalry attacked by infantry and (2) having a lance. Halberdiers negate the first, so only (2) is in effect.
