So I printed out a handful of campaign logs but they fall a little short when it comes to running multiple campaigns concurrently. Has anyone else had any issues with this? What are your solutions.
Regarding Gideon's special> "Command" ability: does this work through walls?

I made a spreadsheet for it that stores all the information. Even automatically fills in the next story mission based on the outcome.

And regarding Gideon's command ability. It doesn't work through walls. See pg. 9 of the Rules Reference Guide - Counting Spaces. You don't need line of sight, but you do you have to be somewhat near the target.

I normally have 2 campaigns slowly being played over time so I made an online tracker, it's functional but I have several small improvements to add.

Here is an example game http://descentmobile.info/imperialassault/IAcampaignoverview.php?urlccID=18 of what the players would see. Once your logged in to admin, there will be more options.

Each hero can see what they have equipped and the skills they have bought. The imperial can see their items and have a "kept secret" hidden cards spot. If you select the mission name on the campaign log it will the show you the details of rewards and purchases the group earned. There is also a place to add notes about the mission so looking back at it over the many weeks you can remember who didn't attend or who did something you want to remember.

Feel free and give it a try.

Rather, I bought 5 box sets, and sold most the contents of 4 of them. But ended up keeping enough to be able to track multiple campaigns if need be.

I would not recommend this as a viable solution when there are superior digital solutions.
