Okay, a touch confused by the ship speed dials.

Do you ONLY set it on the first turn, and then from then on it ONLY changes with a navigate command?

Especially coming from X-Wing, I am a bit confused. Any help?

That's pretty mucht the long and short of it.

That's correct.

Part of the challenge is unlearning things you accept as standard in Xwing. The alternating movement, the hidden part is the command decisions, rather than determining speed and maneuvers. A ship's speed is always known, and the speed dial is intended to be face up at all times.
