I'm leaning towards a somewhat tricked out 775 for my group, but my web fu is failing and I can't find any good plans (the crappy one from a WotC magazine don't count). Anyone have some, or know where I could find some?

As for Wroonians, they're near-humans so going human is an option.

Looking at Chiss may help - if you follow wookiepedia's connection between Wroonians, Pantorans and Chiss.

Perhaps giving them a cold resistance ability that removes 1 setback dice from cold climate and 1 free rank in some skill (survival? resilience? or perhaps some other skill that can represent whatever is special about these guys?), 100xp and 2s across the board?
