I don't think overlooked it, but if you roll more accuracy on an attack roll than the defender has defense tokens left, do the unused accuracy pips turn into single damage pips or stay as accuracy and therefore have no more effect?

As far as I know, the extra accuracy does not do damage, but the one damage you do roll is most certainly going to hit!

Unfortunately it has no effect.
